So what is Paleo?
There are many accepted forms, including Primal which includes some dairy. Everyone is different, and can tolerate different foods. For our purposes we will use the simplest form of Paleo. That means no grains (which makes it automatically gluten free), no dairy, no soy, no legumes (including peanuts), no seed oils, and no heavily processed foods. Meals are built around vegetables, meat , and healthy fat construct. We will use fruit on occasion, but as a garnish, not a main ingredient.
The fats we use most in cooking are coconut oil or grass fed ghee (clarified butter with the milk proteins cooked out.) We also use avocado oil and EVOO, and on occasion, pastured duck fat, lard or tallow. We will also use grass-fed and finished beef, and pasture raised poultry, eggs and pork when available. The week’s menu will list the ingredient specifications.
Meals will be delivered once a week on Monday between the hours of 5:00 a.m. and 9:00 a.m. so you can pick up your meals for the week. They will arrive in re-usable boxed coolers that will contain your food - and cooler packs that will keep the food cool during gym hours. Simply take your food home and put it in your fridge. Reheat in the microwave or on the stove top, if appropriate, or eat cold. Bring the cooler and cooler packs back to the gym for pickup by Thursday. It’s that easy. We will post the week’s menu, along with an ingredient list, at the beginning of each week for the following week.
Orders need to be placed and paid for by midnight on Thursday in order to guarantee Monday delivery. Portion size will tend toward large – approximately 5-6 oz of protein and at least two servings of vegetables. If one of the items that week has an ingredient you are avoiding or dislike, simply inform us when you order, and we will swap it out with another of the available meals that week.
